Sliders in Paradise

- King’s Hawaiian Rolls (buy 2 packs-for you & your “assistants” will eat one package before ever getting home to ensure the quality and that it has not been poisoned.)
- 1 can of sliced (rings) pineapple (save juice for tropical adult cocktail with dinner)
- 1.5 pounds of hamburger (get low fat-almost had 4 alarm fire with mine)
- 1 Avocado
- 2 Red Onions (large)
- Cilantro
- 1 small can of chipotle chile’s (save remainder in plastic container for future use-they're like twinkies and will survive almost forever) Store in fridge or freezer!
- Chipotle seasoning
2 tsp. black pepper
Just plop all ingredients in your blender or mix by hand until well mixed. Roll out round “egg-sized” patties, smash with hands to around ¼- ½ inch thickness and place on your BBQ or whatever burger making apparatus you may have. Cook about 4.27 minutes each side on medium/low. Yes, 4.27 minutes. I like my beef rare, like my man! A rare breed he is!
Ok, back on track! While them sliders is a cookin’… toss your pineapple rings on the grill also, don’t be afraid! Be BOLD! You’re looking for the pretty little BBQ marks on the pineapple meat. THEN, get your rolls out and halve them with a knife. Cut your pineapple rings in half also.Obviously by the picture you can see I layered it: burger patty, avocado, pineapple finally onions...easy! Viola!
These little sliders were for dinner, I served them with a "Sweet & Sour" Cole slaw. My husband is not a big fan of cole slaw, and actually grunted and "rolled his eyes" at me while I was making it...I think he had 3 servings when plated...H'mph! I'll show him! **Note the "almost" heart in my overflow of sauce? I have a "thing" about hearts! I see them everywhere: in nature, splenda in my coffee cup bottom, gum on the sidewalk...and NO, I will not take an ink blot test.

Mr. Russ's Cheesecake Elegante'
Ok, so the story behind this cheesecake recipe is this: My dad (God rest his beautiful soul) was an amazing chef. He would find a recipe and share it with one and all. This recipe is circa 1991? Not sure on the date exactly, but I do remember my dad making it while I was back east, in South Carolina visiting my family, with my daughter, who was about 10 months old at the time...and holy cow was it ever good! Creamy like custard, not anything like the gritty-grainy ricotta cheesecakes! (Blaaahhhckkk) I have had to "tweak" it a bit, since I cannot find the Keebler 2 extra 2 8 serving pie crust shells
Second Layer or Lair (it IS enticing...)
1 16 oz container of Sour Cream
2 tsp. Vanilla
1/4 Cup Sugar

Now after you have licked the batter and the bowls clean, and the cheesecakes 7 minutes baking are up, you must let them rest on a wire rack to cool. Once they are cool, place them in the refrigerator to "Chill and firm up." Then go to bed...or do whatever you like for about 12 hours!

Off of the couch and on to the beach!
So, if you’re like me, I have that desire to once again get in shape. This time for good!!! Well, round right now for me “ROUND” isn’t really my favorite shape, so I have decided to blog about my
I like the split training days of Upper/Lower body since it gives ample amount of time to allow muscles to recover. Along with on cardio days they allow muscles to “loosen up” a tad bit! Or I will be applying some serious WD40 on my hinges!Planning on intense cardio in the mornings & then a 20 minute “C25K” (Couch to 5k) plan in the afternoon. Hey, if the “Biggest Loser” Contestants can train for hours a day why can’t I? They have ample hydration and rest in between. (“Check-Check” on my list of musts in rules. Hydration & Rest!!)
Below is what 4 weeks would look like for me. After 4 weeks, I will change up my weight lifting routine and change up the cardio. I treat my weight training like Circuit Training. I go thru each exercise one time and then repeat 2 more times. I also log my start & finish time and try to beat it by seconds the next time. You burn more calories with intense weight training.

A Vampires Friend-lol-Cilantro Pesto with LOTS of Garlic!
Fibromyalgia Is NOT My Friend!
I was diagnosed about 7 years ago with Fibromyalgia, Chronic Fatigue and Osteo Arthritis. Heck, I was only 34 years old at the time, had 3 children at home, hurt like H*** and was beyond exhausted infrequently. When I say exhausted, I mean ZERO gas in my tank!
For people like me with Fibro, it is an exhausting disease (pardon the pun)! We live day in and day out with pain that migrates all over the body-hence I call it “Pain du Jour.” There are days I feel great and live life normally, and then there are days I feel as if an elephant has walked on my back, hands, wrists or knees! It’s a feeling of achiness and burning, are the main ways I would explain it. We call it “Flares.” Sometimes it comes with swelling, redness or heat. Any way it comes…it stinks!
I have found that what works for me, (and I say me, because no two patients are alike) is this;
1. Learn to manage stress
2. Sleep is the ESSENTIAL tool to keeping Fibro flares away.
3. Motrin and Alleve are your best friends!
4. Don’t wear yourself out, physically!!!
5. Giving all your worries to God!!!! (Some we still internalize over, but knowing things are in His hands is comforting)
Aiding in Diet and Fibro:
1. Eat a healthy diet-Avoid sugar! Sugar when converted from ANY POOR FORM causes MORE inflammation. More inflammation equals more pain!
2. HIGH nutrient dense foods (Fruits & Veggies)
3. Stay far-far-far away from all preservatives and just crap food! You are what you eat!
4. Learn to moderate exercise. (Hard for this former martial arts & gym rat!)
5. Take good supplements: Fish oil, Multi-vitamin, B-stress vitamins, Vitamin D in liquid form, magnesium and Vitamin C (I also take Arnica Montana & Bromelain, along with prescribed Armor Thyroid-helps aid in neuropathy pain sensitivity (fine nerve pain).
** If you know of someone who suffers from Fibromyalgia, PLEASE don’t discount it, or think it’s all in their head. Trust me, we have doubted it ourselves and had many friends, family members and doctors on our quest to find out what is wrong with us, tell us the same thing, until we have found the RIGHT doctor who is knowledgeable, compassionate and helps us!

Darn Close El Pollo Loco Beans
Here’s what you’ve “Bean” needing for good Beans..get it “bean vs been” ok, never mind…onward!
In a crock pot:
2 Cups of Dry Pinto Beans
1 T Cumin
1T Garlic Salt
½ T Chili Powder
2-3 T Dried Onions
1 2-3 inch (halved& NOT seeded) Serrano Pepper

NO Cream of Potato Soup
In a large stock pot boil until tender: You can keep the skins on the potatoes!!!
2 Large Idaho Potatoes diced (these break down and offer a thickening starch naturally)
8-10 Small Red or Golden Potatoes diced
1 tsp. Salt
After potatoes are started, In a stock pot sauté the following diced veggies together:
2 T. Olive Oil
½ Large white or yellow Onion
1 Leek stalk (light green-white) Dark green portion is tough!
2 Ribs of celery
1 Cup of Mushrooms*
2 Cups of Swiss Chard*
¼ tsp Dill
1 tsp Thyme
1 tsp Rosemary
2 T fresh Parsley
Salt & Pepper to taste
Sauté all veggies and herbs together. As potatoes cook in the water and sautéed ingredients have softened up, place about 3 cups of potato water in with veggies you will know when the potato water turns a bit cloudy. (The starch will aid in thickening, along with helping to create a vegetable broth.) Place lid on pot to keep moisture in.
When potatoes are soft- Place ½ of potatoes on stock pot with veggies and broth. Reserve the other half and place in blender with small amount of water to “emulsify” the mixture on high. CAUTION: Place a thick towel over top lid of blender BEFORE blending. The heat will cause it to burst thru the top if not careful!!!! Blend on high until there are no lumps and pour mixture into stock pot with veggies! Stir and let this cook a few minutes –about 10- stirring occasionally. Add salt and pepper to taste. And serve!

Carnivore vs. Herbivore!!!
My lifestyle change is “MY” change. I would not impress my feelings or desires about meat in my house on my men. A caveman is still a caveman…even in 2010! It just means that as the shopper for my cavemen, their meat is as ethically treated as possible and hopefully without chemicals, antibiotics, and preservative free. {Trader Joe’s Plug inserted here :o)} As much as possible, I try to provide beans, legumes and "other" protein sources as substitution for them, but ultimately they want meat!...So I say give them meat-but make it a good lean-free of "crap"-substitution. The human diet requires only 3 oz. of protein a day to manufacture all necessary Amino Acids and needs for the body-the size of a deck of cards. With propper diet and meal planning, a caveman and an herbivore can live happily ever after!

Where (WHO) Is My Umbrella?
Sometimes we are faced with multiple “issues or rain” in our lives all at once, like a deluge of unexpected rain or we may be faced with a light drizzle of “constant rain” pouring down. How we deal with it is up to us and our direct relationship to God.
If your local weather reporter personally called you on the phone and said “(insert your name here) there is going to be a 100% chance of rain and I advise you to take an umbrella, rain coat, boots and a change of clothes" -would you? Or would you head out the door to run your errands, go to work, meet with a friend and then panic and suffer through them all while you're cold, uncomfortable, dripping & soaking wet?
I believe God wants us to be prepared ahead of time, have faith and rely on Him ever BEFORE the rain comes. All the while when the outpouring of "rain" does come, expected or unexpected, we will praise Him through the storm, rely on him for the guidance and direction for our lives with whatever “issue or rain” is at hand. There is no problem too big for God. (Period!!!) Sometimes we wait until the “deluge of rain” comes to be reminded that we need God. I encourage all to grow closer, seek Him, and have a personal and daily relationship with Him. If you do not have a relationship with Him and are burdened at this time with some “rain” in your life, ask him into come in to your life and give Him your “rain”. You will find He has just what you need!

Why Eliminate It ALL And Become Vegan?
1. To become healthier.
2. Sharper mental accuity (I am a full time student & I have felt like I have had a combination of "forgetfulness" aka "Brain fog" and ADD-LOL)
3. Utilize an Anti-inflammation diet due to Fibromyalgia and Arthritis in my body from years of (self) physical abuse from working out.
4. Focus more on Nutrients of organic and whole sources going in my body for utilization!
5. And With all of that will come the weight loss...
6. I also believe in the ethical treatment of animals (A totally different blog for another day)
7. I quiver at the thought of all of the additives, preservatives, fillers, hormones, antibiotics in our mainstream diet!...Hormone disruptors, cancer stimulants.....oh I could go on and on!
I was diagnosed 6 years ago with Fibromyalgia and Arthritis in my hands & wrists. If you are unaware of what Fibromyalgia is --->Fibromyalgia is a common condition characterized by long-term, body-wide pain and tender points in joints, muscles, tendons, and other soft tissues and at times leaves you feeling like you have body aches similar to the flu, random "rundown" and just pooped feeling. Frequent illnesses (Since it is an Auto immune disease like Rheumatoid Arthritis and Lupus-NOT as severe or life threatening but still painful and exhausting).
In the spring of this last year I contracted Mycoplasma Pneumonia while visting my Dad in the hospital. I returned to be so ill that it took me 4 months to recover from TWO bouts of Pneumonia, Pleurisy, 2 broken ribs from coughing, 23 different prescription medications in 30 days, an inflamed gallbladder and then finally gallbldder removal surgery in August of '09. AND then to top it off, my immune system was completely shot, energy was non existant and I was a train wreck, feeling like crap and eating crap...two steps forward,... three steps back was my cycle...I went no where, but backwards.
In the fall of last year I took a Nutrition class with my daughter while at school-what an enlightening experience! In class we focused on where and how our food sources come from-Bottom line SCAREY as HELL! I am not here to preach that everyone should forgo the Dorito's and munch on organic celerey...but do the research and try to figure out what the ingredients are in your food! We watched a movie "Food Inc" (You can see the trailer here http://www.foodincmovie.com/ ) So engrossing and gross at the same time! Everyone in the United States should watch to see where our food comes from, how it is handled and how our farmers are treated...It's HORRIFYING! General consumer has NO IDEA!!! Let me know if you view it! I would love to know your thoughts...
In the journey I am on, here is what I have given up:
- Meat (all animal)
- Dairy
- Artificial sweeteners
- Processed food
- Fast food
- Gluten laiden products
- The "White's" Sugar, Flour & Salt are gone!
- Mostly 95% organic food...
- Do I miss it or feel like anything is missing in my diet? Absolutely not.
- How do I feel? I actually feel better than I have felt in a long time, granted it has only been one week.
- Mental focus? Headaches? Nope not one headache-Mental focus feels sharper and more acute daily.
- Feelings of "Flares" (thats what we Auto immune patients refer to as feeling like crap)? A little on the achey side, but nothing that is not manageable or tolerable or just NORMAL for us.
- General response & feeling of my body? I was dealing with SEVERE congestion in my sinus's before I started (this was the catalyst for me) I was using Afrin 3-4 times daily, a nettie pot, decongestants along with Benadryl and was waking only to feel as if I was suffocating! With in 3 days of being vegan, all symptoms are GONE!
- Weight loss? Down 3.8 pounds in less than a week!

Lime Cilantro Quinoa with Lentils-Topped with Cilantro-Garlic Aioli
Ideas:
- Dried beans left behind? Save in a jar or plastic bag the few stragglers and combine with other orphaned beans for the future.
- Cilantro “Stems” save for blending in the making of the aioli sauce!
- Save finished beans for freezing or another meal in the week-Lord knows you will have enough of them!!!
Beans:
2 Cups of Lentils or mixed beans (Lentils, Split Pea, Pinto Beans Kidney beans-Barley is great in this too with the beans-it acts as a “thickener”.)
8-10 cups of water
1/2 yellow onion
4 cloves of crush garlic
1 tsp. of cumin
¼ cup of “dried vegetables” (carrot, celery, peppers) or you can use fresh veggies.
1tsp black pepper
Rinse beans & then place in a Crock Pot. Cover with water –water should be about 2-3 inches above beans. Add all of the remaining ingredients and cook on high for about 6 hours. Test for bean “tenderness”. When tender they are done. I add salt at the end, so they cook faster.
Garlic Cilantro Aioli
4 cloves of garlic
2 Small Serrano Chiles (seeds included)
“About” 1 cup of cilantro (I just tear the top off of the cilantro and “Fist” measure”) Use stems too! (it ALL gets blended and tastes the same)
¼ tsp Salt (I like Mediterranean or Himalayan salt)
Place all ingredients in a blender and blend until all ingredients become blended. If you do not like “heat” cut back to 1 or NO chiles, its still just as good.
Lime Cilantro Quinoa
2 Cups of Quinoa
4 Cups of water
Place both ingredients in a pot-bring to a boil. Cover and reduce to a low simmer for 15 minutes. Remove from heat & let cool/steam for 5-10 minutes.
Right before serving: Juice 2 Limes & chop ¼ Cup of cilantro. Place these two items in to the pot of cooked quinoa and fluff quinoa to stir in ingredients!
Layer Quinoa on the bottom, followed by beans topped with Aioli and ENJOY!

Corona Farmers Market
I have been doing a tremendous amount of reading and recently completed a nutrition class for school that focused a wide amount on organic foods. I truly am a firm believer of what we put into our bodies to fuel it effects our well being in all capacities!!! You wouldn't put diluted or a wrong mixture of gas in to your car would you? Can you imagine the repair cost? We are doing the same thing to our bodies, hence high medical bills! We eventually will pay the price and are with the rapidly increasing rate of CANCER and obesity. We need to be more aware of what big businesses are placing in our food and not support big corporations who just want to make money and don't care how it effects the consumer.

OWN Your Stairs!

Mind you I live in a community that has hills, so I take full advantage of them and we do this work out atleast 2 times a week (Stairs) and we switch up the exercises doing 6 total in each work out…But feel free to pick from the list or add any you think would be beneficial. FYI at the bottom, middle landing & top of stairs REQUIRED 10 jumping jacks!!! We have 25 stairs total at our park (This can be done at home or on bleachers.)
We start by walking up hill fast tempo. Then anywhere it is flat we either jog or sprint (depending on fitness level) to get heart rate accelerated.
EVERY corner you choose from the following:
Corners: Jumping Jacks, Sit ups or V-sits on the curb, pushups, squats or lunges to failure. Yes we look AWESOME doing them as traffic goes by!
Ahh the stairs: Start/end at top with 10 jumping jacks (and 10 in the middle if there is a middle for you)
© Side squats up the stairs right/left leg (these are done as 2 DIFFERENT exercises alternating legs each time)
© Stair push-ups –prone position, wide arms and feet for stability and 1 push up each step. CRAWL up the steps via hands & feet only to stand to do jumping jacks.
© Calf raises count of 5 each step. Newbies do both feet on single step-More advanced do alternating legs.
© Side squats -again alternate leg
© Deep squats -on stairs (both feet on 1 step)
© Stair Step Lunges (again alternate legs repeat for other leg)
© Stair Tricep dips (hard)
© Football Fast Feet- LOVE THIS ONE (it can be done going up & down the stairs) Each stair do a mamba-like step. 4 counts-right, left, right, left…next step…FAST!
© Knee lifts with side crunch
© Back kick alternating legs
That’s all I can remember for now of the “Actual” Stair routines we have used. (Brain dead & lack of time right now. Still need to be studying-lol)
From the top of the stairs we run about 75 yards on funky terrain and repeat to next exercise after doing the 10 jumping jacks. When done with stairs, it’s a brisk ALL uphill walk and the rule is “if it’s flat you gotta run.” Our slogan is this…”It doesn’t have to be perfect or beautiful; it just HAS TO BE DONE.!!! Perfection will come!”

A little about this "Ordinary Girl"!
I have been pretty much my entire life a very positive and extremely outgoing woman. But I also know when to tread lightly and when to tip toe softly. I have loved and lost, suffered heart ache and extreme joy. I have yelled and screamed (which gets you no where might I say) and laughed so hard I have had water come out my nose!
I have a great love for my family-a deep devotion! I am (still after eighteen years together which 16 of them we have been happily married) absolutely and totally in love with my husband that when he walks in the door after being gone, my heart skips a beat and my toes completely curl when kissing him!
My children are my “everything”! I just wish I could go back in time and really take the time to enjoy them all over again with the wisdom I have today. I was blessed to have the family of “His, Hers & Ours”…figure it out and give yourself a pat on the back!
Today my oldest son Bert is 21 and has joined the Air Force while currently waiting to go to training (Boot Camp) and then to be deployed. He will be the third generation on my husband’s side to have served this Great Nation! Freedom isn’t free!
My daughter Taylor is 19 and has known since she came out of the womb that she was and will be a successful Make-up Artist & Cosmetologist to the stars! (At 14 she was doing all the make-up for our neighbor’s daughters as they were off going to prom!) She definitely physically is my twin. (We love to confuse our neighbors!)
And then there is Adam! Absolutely the funniest kid to be around! He is 15 going on 47. Has an “old soul” and a sense of humor that drifts out of nowhere that will leave you gasping for breath! He eat, sleeps & breathes football in his Sophomore year of school! And loves science! He used to find frogs in our pool who had gone to “frog heaven” and dissect them! He is currently enrolled in the “Health Academy” at his school, which will guide him on to a medical profession for his future! “Paging Dr. Adam…Dr. Adam to the OR STAT.”
I reared my children with the greatest sense of accomplishment. I always tell them “you three are the greatest accomplishment I have ever done in my life!” And let me tell you they are incredible people!
I chose a while back to return to school later in life (after becoming pregnant with my daughter.) A short time after, I then met and married my husband and in one day, I was a wife and mother of 2 small children…and then came baby number three-Adam shortly after!
I am currently pursuing my general education requirements to enter the Nursing Program. I have always wanted to help and serve others in a caring and compassionate way while working in the health field. I guess fashioning an attitude of “Paying it Forward.” When both of my fathers spent their last days in hospitals dying with anonymous nurses around trying to care for them I felt empowered to give back. I feel and hope I can take away the shock and awe of tragedy, just by being compassionate!
My past loves have been Kick Boxing, Tae Kwon DO, and Krav Maga! Funny that as a 5’2 “girl” I used to get the best adrenaline rush while sparring 6’ tall men! LOVED IT! I have always been a fitness enthusiast and love my time in the gym with my friend the “iPod”! Kid Rock (per say) and I have played many games of racquetball together! If you want someone else to work out with… with an off the Electric Grid amount of energy? Try Chalene Johnson’s Turbo Jam or ChaLEAN Extreme routine! OMGosh got 60 days and want to shred up fasssst? Pick up the Insanity work out! And then LOOK OUT! I found mine at Beachbody after watching an infomercial!
I read any and every THING on self help, quotes, fitness, diet & work out techniques! And I love to “Coach” people and give advice that has worked for me to others! (I am a Coach with Beachbody-helping others to achieve their dreams & fitness goals. Can I tell you I LOVE IT!!!) I am currently coaching my Mom in South Carolina (69 and she is as funny as can be) is currently doing squats & arm curls to strengthen up for my brother’s new baby that is on the way! While walking to strengthen her heart, so she can have the stamina to love & provide care for the new “Peanut” that is on his/her way!
I am a research fanatic! Give me something to research for you and I will get you a 50 page dissertation that you will be begging me to stop! Lol
I LOVE-LOVE-LOVE to cook. I can cook almost anything without a recipe! (Thanks to my So. Cal Mom)! I try to cook mostly organic for my family after doing much research on all the “yucky” additives that are either gassed, sprayed, waxed, genetically altered in to our food! (Read Jillian Michaels “Master Your Metabolism” it will keep you up at night J)
I am just an ordinary girl, but I feel as though I have much to give, a purpose greater than my own. I do not want to leave this world and remembered as “the ordinary girl”…but the ordinary girl who did “extraordinary things!” Not of monetary value, but by depositing large sums, of love, trust and friendship into others lives…
